TEHRAN - Bojnourd, the capital of North Khorasan province, is gearing up to host a culinary festival on December 29, showcasing a diverse array of local dishes that are bound to captivate the taste buds of food enthusiasts.

This festival, set against the picturesque backdrop of Bojnourd’s scenic landscapes, aims to celebrate the region’s culinary treasures and promote tourism through its gastronomic delights.

The event promises a vibrant display of Bojnourd’s culinary heritage, with a special focus on various kinds of Ash (a traditional thick soup usually served hot), each crafted with locally sourced ingredients and prepared using time-honored cooking techniques.

From Ashe-Reshte packed with noodles, beans, and herbs to Ashe-Torsh, a tangy and flavorful soup, attendees can indulge in a delightful exploration of Bojnourd’s soup culture.

Traditional sweets, rich in flavors and textures, will be on display, showcasing the exquisite craftsmanship and culinary artistry that defines Bojnourd’s dessert-making tradition. Festival-goers can relish delicacies like Baklava, Zoolbia, and Bamieh, sweet treats that are a testament to the region’s culinary heritage.

In addition to the savory and sweet delights, the festival will feature an array of herbal beverages, offering a refreshing respite for attendees.

According to organizers, the event aims not only to satiate gastronomic desires but also to showcase Bojnourd as a vibrant cultural destination, inviting tourists and travelers to immerse themselves in the city’s unique culinary offerings and scenic beauty.

No Persian meal is complete without an abundance of herbs. Every table is usually set with sabzi-khordan, a basket of fresh herbs, radishes, and scallions, which are eaten raw and by the handful. Persian cuisine is, above all, about balance — of tastes and flavors, textures and temperatures.

Experts believe that food tourism has become one of the most dynamic and creative segments of tourism and, at the same time, has naturally positioned itself as an element of diversification of tourism with a high impact on the promotion of sustainable development at the regional and local levels.
